Potato Taco Biscuits

It’s raining, it’s pouring!!

It’s time for comfort food!

But woe is me, my cupboards are bare.

It’s that time again where I pull out what I have and see what I can do.

2 pounds Ground beef

½ Onion

4 potatoes

½ cup water

Taco seasoning packet

Salt and pepper

Only one can of biscuits (darn I really needed two)

4 TLBs butter

I’m sure you can guess where I’m going with this.


Potato Taco Biscuits

Let’s get started


Salt and pepper the ground meat.

Peel and chop up the potatoes

Chop up the onions


Melt 2 TLBS of butter and sauté the onions. ( It’s already smelling so good, I wish I had some garlic to throw in there too)


Now dump in the potatoes with the ½ cup of water


COVER – get those potatoes soft


After the potatoes are soft, now goes in the meat. Brown the meat with the onions and potatoes.



Once browned, time for the taco seasoning

Add 1 cup plus 1/3 cup water and bring to a boil. (That’s what it states on the package of the taco seasoning)

Simmer for 10 minutes or until most liquid is evaporated



As you are waiting for that 10 minutes flatten out the biscuits, I use my hands. You can use a rolling pin if you want. Remember I do simple.

Melt the rest of the butter too at this time.


Once the meat mixture is done place a spoon full in the middle of the biscuits, sprinkle some cheese on top and fold over and seal by using a fork around the edges. Poke a few holes on top to let the steam escape.

Baste the top with butter, you don’t really need to but its butter and we are talking comfort food.

Not sure what happen to the picture of the final assembly before it went into the oven.   I guess I got excited they were ready to go in the oven and everything was smelling so good.


Bake 350 for about 20 minutes until the biscuits are a light golden brown.
